Smoked Gouda Jalapeno Poppers

2-3 strips of thick-cut applewood smoked bacon, cut into ½ inch lardons

8 ounces of cream cheese, room temperature

½ cup of smoked Gouda cheese, finely shredded

1 egg, room temperature

6 Jalapenos, halved and deseeded

¾ cup of panko bread crumbs

Instructions:

  1. In a large pan over medium high heat, cook the bacon until crispy, about 10 minutes.

  2. Preheat oven to 375 degrees F.

  3. In a large mixing bowl, combine the cream cheese, shredded Gouda cheese, and egg. Mix with a fork until thoroughly combined.

  4. Fill each jalapeno half with about 1-2 tablespoons of the cheese mixture, then dip in panko breadcrumbs.

  5. Transfer to an aluminum foil and parchment paper lined baking sheet and bake for 30-45 minutes, until the tops are nice and golden brown.

  6. Serve and enjoy!
