Coconut Mojito with Chili-Coconut Rim

12 mint leaves

½ ounce of fresh lime juice

2 ounces of coconut rum (Malibu)

½ ounce of simple syrup

1 ounce of coconut water


1 to 2 ounces of chilled club soda

Optional Rim:

1 teaspoon of ground coconut

½ teaspoon of chili powder


In a cocktail shaker, muddle the mint with the lime juice. Add the rum, simple syrup, coconut water and ice and shake vigorously. Strain into an ice-filled highball glass and top with club soda.
