Charred Gem Lettuce with White Peach, Burrata, & Lemon-Anchovy Dressing

Dressing:

Juice of one lemon

1 teaspoon of grainy mustard

1 tablespoon of finely grated Parmigiano-Reggiano cheese

2 tablespoons of anchovy paste

¼ cup of olive oil

3-finger pinch of salt

3-finger pinch of freshly ground black pepper

Instructions:

Put all the ingredients into a small bowl and whisk together until combined. Set aside.

Salad:

2 heads of gem lettuce, halved lengthwise

2 tablespoons of olive oil

Salt

Freshly ground black pepper

2 ripe white peaches, slices

8 ounces of Burrata, gently torn in half

¼ cup of pea shoots

Instructions:

Drizzle each half of the lettuce with olive oil and sprinkle with salt and pepper. Heat up a large cast iron griddle or grill pan on high heat. When the cast iron surface is hot, char the lettuce, about 2-3 minutes on each side. Assemble the salad and drizzle with the lemon-anchovy dressing and a sprinkling of pea shoots. Enjoy!
